1. Pan-seared scallops and cilantro-celery mayonnaise: Scallops can be cooked to perfection over medium-high heat in less than 7 minutes. For the sauce, combine low-fat mayonnaise, minced celery, fresh cilantro, salt, and pepper. Serve with lime wedges.
2. Shrimp and tomato linguine pasta: The key to this dish is the sauce. Combine diced tomatoes, garlic, and dry white wine. Bring to a simmer for 30 minutes before adding butter and salt and pepper. Cook the linguine as directed and use Cajun seasoning when preparing the shrimp.
3. Mexican baked fish: It takes less than 30 minutes to create this Mexican-inspired fish recipe. Place cod fillets in a prepared baking dish and pour salsa, shredded cheese, and crushed tortilla chips on top. Bake uncovered at 400 degrees Fahrenheit for 15 minutes.
